A Special Easter Recipe

With Easter soon around the corner, we thought you should be prepared with this special recipe just for you…

Here’s what you will need;

-350g of Chocolate 

-3 tbsp. Golden Syrup

-110g unsalted butter

-40g nibbed pistachios

-75g Dried Sour Cherries

-100g Shortbread Biscuits

-50g White Chocolate Buttons

-175g Jelly Beans

-2 Ready Made Meringue Nests

-1 Easter Egg Mould

The Prep Work


Begin by melting 300g of your chosen chocolate mixed in with golden syrup and butter in a large bowl sitting over a pan of lightly simmering water. Repeatedly remove from the heat, stir and then allow to cool for around 5-10 minutes. You can now stir in the remainder of your ingredients including your pistachios, sour cherries, shortbread biscuits, white chocolate buttons, but remember to save some chocolate and jelly beans for the end!

The Rocky Road Mix


Your mix should now be ready. Grab your Easter Egg Mould and pour the mix evenly over the insides of each half of the mould. *Remember to keep the remainder of your mix in case you need it later! Chill the mould for at least 45 minutes and carefully remove from the mould once set…

Finishing Touches


With your left-over mix, place in the microwave or simmer over a pan and begin to melt. Sparingly brush the mix over the edges of each half of your Easter Egg to create an adhesive for the halves to join and set. But wait! Before this is done fill each half of your egg with Jelly Beans. You can now join the halves together ensuring the all edges are filled with chocolate allowing it to properly set… Place back into the fridge and allow to chill.

Ready to Serve


Carefully, with a sharp knife, cut the top off of the Easter Egg. It is now ready to serve!
